Spinach And Ricotta Bruschetta Recipe

Ingredients
  • 8 slices French bread, toasted .
  • 1 garlic clove, minced .
  • 1/2 c parmesan cheese, grated .
  • 1/2 c ricotta cheese .
  • 1 1/2 c fresh spinach .
  • 1 dash ground nutmeg

Directions
  • Step #1 Preheat skillet & broiler.
  • Step #2 Saute spinach & garlic in hot skillet with a drizzle of olive oil until spinach is wilted, about 2 mins.
  • Step #3 Remove from heat & stir in the ricotta & nutmeg in the hot skillet.
  • Step #4 Place bread on a broiler pan & top this with spinach mix then sprinkle with parmesan.
  • Step #5 Broil 2-3 mins or until brown & bubbly.
