Ingredients
  • 1 c milk .
  • 3 eggs .
  • 1/2 tsp salt .
  • 3/4 c all-purpose flour .
  • 1 lemon, sliced .
  • 1/8 tsp nutmeg .
  • 2 tart apples .
  • 1/2 c confectioners' sugar .
  • 2 tbsps granulated sugar .
  • 7 tbsps butter

Directions
  • Step #1 Preheat oven to 425F degrees F.
  • Step #2 Make a batter of the eggs, flour, salt, nutmeg & milk by puréeing them in a mixer until smooth.
  • Step #3 Heat 3 tbsps of the butter in a heavy 10-inch cast-iron skillet until it is bubbly.
  • Step #4 Pour batter into the skillet & put the skillet on the top rack of the oven.
  • Step #5 Bake until edges are browned & crisp, about 20 mins.
  • Step #6 Meantime, quarter, core & peel the apples & thinly slice them.
  • Step #7 Heat the remaining butter in another large skillet, sprinkle with sugar, add the slices, & sauté over high heat until apples are browned.
  • Step #8 Spread them over the pancake, make a row of lemon slices across the top, & sprinkle with the confectioners' sugar.
