Slovenian Almond-apricot Bread Recipe

Ingredients
  • 2 tbsps butter .
  • 1 tsp baking soda .
  • 1 tsp salt .
  • 1/2 tsp baking powder .
  • 1 1/2 c water .
  • 1 egg, beaten .
  • 1 c whole wheat flour .
  • 1 tsp vanilla .
  • 1 c toasted sliced almonds .
  • 1/2 c maple syrup .
  • 1 1/2 c dried unsulfured apricots, sliced .
  • 1 1/2 c flour .
  • 1 tsp freshly grated orange rind

Directions
  • Step #1 In a medium saucepan, bring the water & apricots to a boil, then simmer until soft, at least 10 mins.
  • Step #2 Add the butter, maple syrup, egg, vanilla & orange rind; stir well until butter melts.
  • Step #3 Remove the mixture from the heat.
  • Step #4 Preheat oven to 350°F.
  • Step #5 Sift together the flours, salt, baking soda & baking powder.
  • Step #6 Fold the dry ingredients into the apricot mixture.
  • Step #7 Add the sliced almonds & mix well.
  • Step #8 Spread the batter into an oiled medium-sized loaf pan.
  • Step #9 Bake for 1 hr & 15 mins, until knife inserted in center comes out clean.
  • Step #10 Allow the bread to cool for a few mins before removing from the pan.
