fresh raspberries or fresh strawberries or fresh blueberries, if you like .
2 tbsps cooking oil .
1 tbsp granulated sugar .
1/4 tsp salt .
1 egg .
maple syrup or fruit-flavored syrup or powdered sugar, if you like .
1 c all-purpose flour .
1 tsp baking powder .
shortening .
1/4 tsp baking soda .
1 c buttermilk
Directions
Step #1 Put flour, baking soda, sugar, baking powder, & salt in a mixing bowl.
Step #2 Stir with a wooden spoon to mix.
Step #3 Save until Step 3.
Step #4 Crack the egg into another mixing bowl.
Step #5 Beat with a wire whisk or fork until yolk & white are mixed.
Step #6 Add buttermilk & oil to egg.
Step #7 Beat with the wire whisk until ingredients are well mixed.
Step #8 Add egg mixture to flour mixture.
Step #9 Stir with the wooden spoon until dry ingredients are wet.
Step #10 (The batter should be somewhat lunpy, not smooth.
Step #11 ).
Step #12 Grease an unheated griddle or large skillet with the shortening.
Step #13 Put the griddle or large skillet on a burner.
Step #14 Turn heat to medium & let griddle or skillet get hot.
Step #15 (To check if the griddle or skillet is ready, carefully sprinkle a few drops of water on the surface.
Step #16 The water will dance across the surface when the griddle is hot enough.
Step #17 ).
Step #18 For each pancake, pour about 1/4 c batter onto the got griddle or skillet.
Step #19 Cook over med-heat/flame until pancakes have slightly bubbly surfaces & the edges are slightly dry.
Step #20 (This will take about 2 mins.
Step #21 ).
Step #22 Turn the pancake over with a pancake turner.
Step #23 Cook until bottoms are golden brown.
Step #24 (about 2 mins more).
Step #25 Remove pancakes from griddle or skillet & put on a serving plate.
Step #26 Cover up with foil wrap to keep warm.
Step #27 Repeat until all the batter is used.
Step #28 Turn off burner.
Step #29 Remove griddle or skillet from the burner.
Step #30 STIR IT IN: If plain flapjackes aren't your favorite, peanut butter-flavored pieces, butterscotch pieces, sliced peanuts, jazz 'em up by stirring 3/4 c blueberries or raspberries or 1/4 c miniature semisweet chocolate pieces, or miniature candy-coated semisweet chocolate pieces into the pancake batter.
Step #31 Candy-coated chocolate pieces will color the batter a bit.
