Chicharrones De Pollo--puerto Rican Fried Chicken Recipe

Ingredients
  • 1 frying chicken .
  • vegetable oil (for deep frying) .
  • 2 c flour .
  • 1 piece nickle-sized ginger, sliced .
  • 1 tbsp salt .
  • 1/4 c soy sauce .
  • 1 bay leaf .
  • 1/4 c lemon juice .
  • 2 garlic cloves, sliced .
  • 1/4 c rum .
  • 1 tsp pepper

Directions
  • Step #1 Cut the chicken into chunks.
  • Step #2 You should get 10-16 pieces.
  • Step #3 Combine the soy sauce, & bay leaf in a bowl or zipper bag, lemon juice, garlic, ginger, rum, add the chicken pieces, & let marinate at least 4 hrs in the refridgerator (overnight is best).
  • Step #4 Combine the flour, & pepper, salt, & put on a plate or waxed paper for dredging.
  • Step #5 In an electric fryer, or on the stove, heat the vegetable oil to 375 degrees.
  • Step #6 Once the oil has reached the correct temperature, dredge the chicken 4-5 pieces at a time, & fry until crisp & golden brown.
  • Step #7 The time will depend on the size of the chicken.
  • Step #8 As you complete each batch, remove the cooked pieces to a rack to drain, & dredge & fry the next batch.
  • Step #9 Serve with rice & beans.
  • Step #10 A salad is good here, too.
