Potato Apricot Dumplings Recipe

Ingredients
  • salt & pepper .
  • 1/2 c butter, melted (optional) .
  • 12 small apricots .
  • 12 tsps lumps of sugar .
  • 1 tsp baking powder .
  • 3 c unbleached all-purpose flour .
  • 7 medium potatoes .
  • 2 eggs, slightly beaten

Directions
  • Step #1 Boil potatoes in large pot of water, drain & put in the fridge for 12-24 hrs.
  • Step #2 Peel & grate potatoes & place this in large bowl.
  • Step #3 Add eggs, salt, flour & baking powder.
  • Step #4 Knead dough until it is firm & set aside.
  • Step #5 Half & pit apricots & place a lump of sugar where pit was.
  • Step #6 Divide dough in 12 pieces & wrap firmly around each whole apricot.
  • Step #7 Make sure dumplings are well sealed.
  • Step #8 Drop dumplings in 4-6 quarts boiling water & cook for 15-20 mins.
  • Step #9 Remove to platter & sprinkle with butter, if desired.
