Thousand Island Relish Recipe

Ingredients
  • 1/2 c pickling salt .
  • 3-5 c water .
  • 1 large cauliflower, sliced coarsely .
  • 2 red peppers, seeds removed & sliced .
  • 1 tbsp mustard seeds .
  • 4-5 c vinegar .
  • 2 green peppers, seeds removed & sliced .
  • 3/4 c flour .
  • 6 tbsps dry mustard .
  • 1 tbsp turmeric .
  • 6 large onions, sliced coarsely .
  • 8-12 large cucumbers, washed, seeds removes, sliced .
  • 1 tbsp celery seeds .
  • 3 c sugar

Directions
  • Step #1 Place vegetables in a food processer; chop coarsely.
  • Step #2 Drain off excess juice.
  • Step #3 Sprinkle top with the pickling salt & add the water.
  • Step #4 Let stand for one hr & drain again thoroughly.
  • Step #5 Mix together the dry ingredients in the cucumber mixture.
  • Step #6 Stirring well to mix, then add the vinegar.
  • Step #7 (This prevents lumps).
  • Step #8 Heat on stove.
  • Step #9 After it come to a boil, cook mixture for 20 mins, stirring constantly to prevent burning.
  • Step #10 Place in sterilized jars & seal hot.
