Ratatouille Stew With Sausage And Chickpeas Recipe

Ingredients
  • 1/2 tsp black pepper .
  • 2 garlic cloves, minced .
  • 1/2 c sliced green bell peppers .
  • 1 1/3 c fat free chicken broth .
  • 1 tsp olive oil .
  • 2 c sliced peeled eggplants .
  • 2 c sliced zucchini .
  • 6 oz smoked turkey sausage, halved lengthwise & cut into 1/2-inch slices .
  • 1 (15 oz) can chickpeas, rinsed & drained .
  • 4 c cubed tomatoes .
  • 2 tbsps tomato paste .
  • 1 tbsp sliced fresh thyme .
  • 1 c finely sliced onions .
  • 1/2 c sliced fresh parsley .
  • 1/4 tsp salt .
  • 1/2 c sliced yellow bell peppers

Directions
  • Step #1 Add oil to a dutch oven; heat oil over medium-high heat.
  • Step #2 Add in onion, sausage, & bell peppers; stir/saute 5 mins.
  • Step #3 Add in tomato & next 8 ingredients; bring to a boil.
  • Step #4 Cover up, lower heat, & let simmer 35 mintues.
  • Step #5 Uncover, & let simmer 20 mins.
  • Step #6 Stir in parsley & thyme.
