Hapankaalikeitto (finnish Sauerkraut Soup) Recipe

Ingredients
  • salt .
  • 10 whole allspice .
  • fresh ground black pepper .
  • 6 c beef stock .
  • 1 lb beef, trimmed fat, & cut into small cubes .
  • 3 c sauerkraut .
  • sour cream (to garnish) .
  • 1 ham bone (or a few chunks smoked ham) .
  • 2 bay leaves

Directions
  • Step #1 Place the beef cubes & ham bone In a large-ish sauce pan with the sauerkraut, stock, & allspice.
  • Step #2 Bring to a boil, partially covered, then reduce heat & let simmer, for about 2 & 1/2 hrs over medium-low heat.
  • Step #3 Spice up with salt & pepper to taste.
  • Step #4 Remove allspice berries & bay leaves.
  • Step #5 When ready to serve, top this with a spoonful of thick sour cream, ladle into big bowls, & take to the table with chunks of rye bread & a bowl of sour cream to pass around the table.
