Butternut Soup With Pears And Apples Recipe

Ingredients
  • 1 3/4 c water .
  • 1/2 c apple juice .
  • 1/8 tsp black pepper .
  • 3/4 c sliced celery .
  • 4 c cubed peeled butternut squash .
  • 1/4 tsp salt .
  • 1 c sliced peeled braeburn apples .
  • 3 tbsps maple syrup .
  • 1 (14 1/2 oz) can vegetable broth .
  • 1 c sliced peeled anjou pears .
  • 1 tbsp butter or margarine .
  • 1 c sliced onions .
  • 1 bay leaf

Directions
  • Step #1 Melt the butter In a large-ish soup pot over medium-high heat.
  • Step #2 Add in onion & celery; stir/saute for 4 mins or until tender.
  • Step #3 Add in squash & the next 8 ingredients; bring to a boil.
  • Step #4 Partially cover, lower heat, & let simmer 30 mins or until tender.
  • Step #5 Throw out bay leaf.
  • Step #6 Transfer half of squash mixture to the container of a mixer or food processor/blender; process until smooth.
  • Step #7 Pour puree into a bowl; repeat procedure with the remaining squash mixture.
  • Step #8 Return all puree mixture to soup pot; stir in the syrup.
  • Step #9 Cook over med-heat/flame for about 5 mins or until well heated.
  • Step #10 **Could use stick mixer in soup pot instead of pureeing in mixer.
