Arbroath Toasties Recipe

Ingredients
  • 1 pinch salt .
  • 1 c milk (237 ml) .
  • 6 oz smoked haddock (175g) .
  • 1 pinch pepper .
  • 1 oz grated cheese, strong hard (25g or 1/4 US c) .
  • 1 egg (separated into white & yolk) .
  • 4 slices of buttered wheat toast .
  • 1/2 oz all-purpose flour (15g or 2 tbsps)

Directions
  • Step #1 Heat the smoked haddock in quarter pint (157 ml or two-thirds US c) of the milk in a saucepan.
  • Step #2 Bring to the boil, reduce the heat, cover & cook for about five mins or until the fish flakes easily with a fork.
  • Step #3 Remove the fish with a fish slice & flake.
  • Step #4 Mix the flour with the rest of the milk & then stir in theto the milk in the saucepan.
  • Step #5 Bring to the boil & cook for two mins, strirring continuously until thick.
  • Step #6 Stir in the cheese, egg yolk & flaked fish.
  • Step #7 Spice up to taste with salt, pepper then heat through.
  • Step #8 Whisk the egg white until it is stiff & fold in with a metal spoon.
  • Step #9 Put the toast on a grill (broiler) rack & spoon the fish mixture onto each slice of toast.
  • Step #10 Place under a hot grill until it is lightly browned.
  • Step #11 Serve as soon as possible.
