Mediterranean Eggs Recipe

Ingredients
  • 6 basil leaves, finely sliced .
  • salt, to taste .
  • 1/4 c cream, low fat is fine .
  • 6 eggs .
  • 2 slices country bread (thick slices) .
  • 200 g button mushrooms, roughly sliced .
  • 1 tbsp freshly grated parmesan cheese .
  • fresh ground black pepper, to taste .
  • 1 tbsp olive oil .
  • 1 tsp unsalted butter .
  • 4 slices prosciutto .
  • 300F g cherry tomatoes, quartered

Directions
  • Step #1 Heat the butter & oil In a large-ish non-stick pan & sauté the tomatoes & mushrooms, until they begin to soften (about 2-3 mins).
  • Step #2 At the same time, basil, beat together the eggs, cream, seasonings & parmesan with a fork; then add them to the tomatoes & mushrooms & scramble.
  • Step #3 Grill or toast the bread & panfry the prosciutto in a little oil (preferably in a non-stick pan) until crisp.
  • Step #4 To serve, place a piece of bread on each plate & top this with the scrambled eggs & then the prosciutto.
  • Step #5 Garnish with a sprig of basil.
