Step #1 Heat the butter & oil In a large-ish non-stick pan & sauté the tomatoes & mushrooms, until they begin to soften (about 2-3 mins).
Step #2 At the same time, basil, beat together the eggs, cream, seasonings & parmesan with a fork; then add them to the tomatoes & mushrooms & scramble.
Step #3 Grill or toast the bread & panfry the prosciutto in a little oil (preferably in a non-stick pan) until crisp.
Step #4 To serve, place a piece of bread on each plate & top this with the scrambled eggs & then the prosciutto.
