Chocolate Plum Pudding Cake Recipe

Ingredients
  • 1/2 c coarsely sliced walnuts
  • 1/3 c unsweetened cocoa powder
  • 1/2 tsp ground nutmeg
  • 1 tbsp ground cinnamon
  • 3 eggs
  • 3/4 c all-purpose flour
  • 2 c applesauce
  • 2/3 c raisins
  • 1/4 tsp salt
  • 1 1/2 c white sugar
  • 3/4 c whole wheat flour
  • 2 tsps baking soda
  • 3/4 c butter, softened

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Place raisins in a small saucepan, & cover with boiling water.
  • Step #3 Soak for 5 mins, then drain.
  • Step #4 Grease & flour a 9 inch tube pan.
  • Step #5 Sift together the all-purpose flour, baking soda, cinnamon, whole wheat flour, salt, cocoa, & nutmeg.
  • Step #6 Set aside.
  • Step #7 In a large bowl, cream butter & sugar until light & fluffy.
  • Step #8 Blend in the eggs, then the applesauce.
  • Step #9 Beat in the flour mixture.
  • Step #10 Stir in raisins & walnuts.
  • Step #11 Spread batter evenly into prepared tube pan.
  • Step #12 Bake in preheated oven for 80 mins, or until a toothpick inserted in the center of cake comes out clean.
  • Step #13 Let cool in pan for 10 mins, then turn out onto a wire rack & cool completely; chill.
