Potato-chip Encrusted Salmon Recipe

Ingredients
  • 1/3 c sliced fresh dill .
  • 2 tbsps olive oil .
  • 1/2 lime, zest of .
  • fresh ground black pepper .
  • 2-3 lbs salmon .
  • 1 (5 1/2 oz) bag kettle-cooked potato chips .
  • salt

Directions
  • Step #1 Preheat oven to 400°F.
  • Step #2 Line a baking sheet with foil wrap & lay the salmon, skin side down, in the center of the baking sheet.
  • Step #3 Spice up with salt & pepper.
  • Step #4 Crush kettle chips (they're crunchiest), lime zest & dill in a bowl until the chips resemble coarse crumbs.
  • Step #5 Mix in olive oil.
  • Step #6 Coat the salmon with a thin, even layer of potato chip mixture & pat carefully so it stays put.
  • Step #7 Bake for 20-25 mins or until chip coating is nicely browned.
  • Step #8 Use spatulas to transfer to plates to serve.
