Chicken & Orzo Soup For 1 Or 2 Recipe

Ingredients
  • 2 tsps lemon juice .
  • 1 (14 oz) can chicken broth, fat-free .
  • 1 tsp grated fresh ginger .
  • 1/8 tsp ground turmeric .
  • black pepper .
  • nonstick cooking spray .
  • 1/4 c orzo pasta, uncooked .
  • 2/3 c shredded carrots .
  • 3 oz boneless skinless chicken breasts, cut into bite-sized pieces .
  • 1 c water .
  • 1/3 c sliced green onions

Directions
  • Step #1 Spray medium sauce pan with cooking spray, heat over medium-high heat; Add chicken , cook & stir 2 to 3 mins or until no longer pink; remove this from heat & set aside.
  • Step #2 In same saucepan mix broth, onion, carrot, water, orzo, ginger & turmeric; bring to a boil.
  • Step #3 Reduce heat & let simmer, covered, 8 to 10 mins or until orzo is tender.
  • Step #4 Stir in chicken & lemon juice; cook this until hot; season to taste with pepper; Laddle into bowls & sprinkle with green onions, if desired.
