Ingredients
  • 3 eggs .
  • 1/4 tsp dried thyme .
  • 2 1/4 lbs lean ground beef .

  • 2 tbsps olive oil .
  • 1/3 c sliced onions .
  • 5 tbsps all-purpose flour .
  • 1 tbsp tomato paste .
  • 2 1/2 tsps seasoning salt .
  • 1 dash cloves .
  • 2 c beef consomme .
  • 2 tsps worcestershire sauce .
  • 1/2 c madeira wine or beef broth .
  • madeira wine sauce .
  • 1/4 c butter or margarine .
  • 1/4 tsp dried rosemary, crushed .
  • 1/2 c ketchup .
  • 1/4 tsp ground mustard .
  • 1 (17 1/4 oz) package frozen puff pastry, thawed .
  • 1/4 tsp browning sauce (optional) .
  • 2 c sliced fresh mushrooms .
  • 3/4 c dry breadcrumbs .
  • 1/8 tsp pepper

Directions
  • Step #1 In a bowl, seasoned salt, ketchup, beat 2 eggs, Worcestershire sauce, mustard & pepper.
  • Step #2 Crumble beef over & mix well.
  • Step #3 Sprinkle top with onion & bread crumbs; mix carefully.
  • Step #4 Shape into two loaves, about 9-inches x 3-inches.
  • Step #5 On a lightly floured surface, roll out each pastry sheet into an 18-inch x 16-inch rectangle.
  • Step #6 Invert meat loaves & place this in center of each pastry; fold short sides of pastry over loaf.
  • Step #7 Fold long sides over loaf and.
  • Step #8 pastry seal seams.
  • Step #9 Place, seam side down, on a rack in a 15-inch x 10-inch x 1-inch baking pan.
  • Step #10 Beat remaining egg; brush over pastry.
  • Step #11 Bake at 350°F for 60 to 70 mins.
  • Step #12 Meanwhile, for sauce, melt butter in a saucepan.
  • Step #13 Whisk in flour until smooth.
  • Step #14 Stir in the consomme, browning sauce, rosemary, thyme, tomato paste, if desired & cloves.
  • Step #15 Bring to a boil; cook & stir for 2 mins or until thickened.
  • Step #16 Stir in wine or broth.
  • Step #17 In a skillet, saute mushrooms in oil until tender.
  • Step #18 Serve the mushrooms & sauce over meat loaf slices.
