Potato-green Bean Salad Recipe

Ingredients
  • 2 tbsps red wine vinegar .
  • Salad .
  • 1 lb red new potatoes, unpeeled .
  • 2 tbsps fresh oregano, sliced .
  • 1/4 c extra-virgin olive oil .
  • 1/2 small red onion, thinly sliced .
  • 1/2 tsp ground pepper .
  • Vinaigrette .
  • 2/3 c feta cheese, crumbled .
  • 1/2 tsp salt .
  • 8 oz green beans, cut diagonally into thirds .
  • 1 tsp garlic, minced .
  • 16 kalamata olives, pitted & sliced lengthwise

Directions
  • Step #1 In a small bowl, whisk together all the vinaigrette ingredients except oil; slowly whisk in oil.
  • Step #2 Place onions in another small bowl; cover with cold water.
  • Step #3 Let stand while preparing salad; drain.
  • Step #4 Cut potatoes into 1/2-inch-thick slices; halve slices.
  • Step #5 Cook in large pot of boiling water 10 to 12 mins or until tender.
  • Step #6 With slotted spoon, remove potatoes from water, draining well; reserve cooking liquid in pot.
  • Step #7 Place potatoes in large bowl.
  • Step #8 Add half of the vinaigrette; toss carefully to mix.
  • Step #9 Add green beans to same pot of boiling water; cook 4 to 5 mins until just tender.
  • Step #10 Drain; rinse under cold running water.
  • Step #11 Pat dry; add to potatoes.
  • Step #12 Stir in remaining vinaigrette.
  • Step #13 Add olives, cheese, & onions; stir carefully to mix.
  • Step #14 Serve at about room temp.
