Dijon Scalloped Potatoes Recipe

Ingredients
  • 2 tbsps butter, melted .
  • 3/4 (250 g) package cream cheese, softened .
  • 1 (10 oz) can chicken broth .
  • 3 c crushed crackers (Ritz are best) .
  • 2 tsps parsley, fresh & sliced .
  • 1 1/2 lbs potatoes, peeled & thinly sliced (about 3 medium potatoes) .
  • 3 tbsps grated parmesan cheese .
  • 1 medium onion, sliced .
  • 1 tbsp Dijon mustard

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Spray skillet with cooking spray & heat on medium high.
  • Step #3 Add onion, cook til tender 5-7 mins, stirring often.
  • Step #4 Add cream cheese, broth & mustard.
  • Step #5 Mix well.
  • Step #6 Remove from heat & set aside.
  • Step #7 Lightly spray 9x13 pan with cooking spray.
  • Step #8 Toss potatoes with cream cheese mixture & spoon into prepared pan.
  • Step #9 Combine crackers, parmesan cheese, butter & parsley.
  • Step #10 Sprinkle top evenly over potatoes.
  • Step #11 Bake 50 mins to 1 hr til potatoes are tender.
  • Step #12 Let stand 5 mins before serving.
