Thai Sweet Potato Custard Recipe

Ingredients
  • 1 1/4 c sweet potatoes, cooked & mashed .
  • 1 1/4 c sugar .
  • 3 large eggs .
  • 1 c unsweetened coconut milk

Directions
  • Step #1 Heat oven to 400°F & lightly grease & 8- or 9-inch square baking pan.
  • Step #2 To prepare the custard: In a medium saucepan, stir this together the eggs & the coconut milk & then mix in the sugar.
  • Step #3 Add the sweet potatoes & stir well.
  • Step #4 Bring to a gentle boil over med-heat/flame, until the sugar dissolves & the custard thickens a bit, stirring often, 4 to 5 mins.
  • Step #5 Pour the custard into the prepared pan & bake for 30 to 40 mins, until puffed & golden brown; a butter knife inserted in the center should come out clean.
  • Step #6 Let it cool.
  • Step #7 Serve at about room temp, cut into small squares to eat with a fork or spoon.
