Jambalaya With Shrimp And Andouille Sausage Recipe

Ingredients
  • 2 c fat-free chicken broth .
  • 1 c sliced onions .
  • 1 tbsp minced garlic .
  • 1/2 tsp hot pepper sauce .
  • 1 c sliced red bell peppers .
  • 1 tsp dried oregano .
  • 1 tbsp tomato paste .
  • 1/2 tsp onion powder .
  • 3/4 c water .
  • 1 tsp fresh ground black pepper .
  • 1 c uncooked long-grain white rice .
  • 1 bay leaf .
  • 1 tbsp olive oil .
  • 2 tbsps sliced fresh parsley .
  • 1 (14 1/2 oz) can sliced tomatoes, undrained .
  • 1/4 tsp garlic salt .
  • 1/2 lb peeled & deveined medium shrimp .
  • 1 tsp paprika .
  • 6 oz andouille sausages, sliced .
  • 1/2 tsp dried thyme

Directions
  • Step #1 Heat olive oil In a large-ish dutch oven over medium high heat.
  • Step #2 Add sliced onion, minced garlic, sliced bell pepper, & sausage; saute' 5 mins or until vegetables are tender.
  • Step #3 Add rice & the next 7 ingredients (through bay leaf); cook 2 mins.
  • Step #4 Add broth, tomato paste, water, hot pepper sauce, & sliced tomatoes; bring to a boil.
  • Step #5 Cover up, reduce heat, & let simmer 20 mins.
  • Step #6 Add shrimp; cook 5 mins.
  • Step #7 Let stand 5 mins.
  • Step #8 Discard bay leaf.
  • Step #9 Stir in parsley.
