Pumpkin, Pear, And Cranberry Gratin Recipe

Ingredients
  • 2 tbsps brown sugar .
  • 2 slices white bread .
  • 1/8 tsp pepper .
  • 1 tsp grated orange rind .
  • 1/4 tsp salt .
  • 4 c cubed peeled fresh pumpkin (1/2 inch cubes) .
  • 2 c finely sliced peeled pears .
  • 3 tbsps dried sweetened cranberries .
  • 1/2 c fresh orange juice .
  • 1 tbsp butter, melted .
  • 1/2 c shredded reduced-fat sharp cheddar cheese .
  • 1 tsp grated peeled fresh ginger

Directions
  • Step #1 Steam pumpkin, covered, for 10 mins or until tender; drain.
  • Step #2 Add pumpkin, pear, & the next 7 ingredients into a large mixing bowl; toss carefully to coat.
  • Step #3 Spoon mixture into a 11x7 inch baking dish that has been coated with non-stick cooking spray.
  • Step #4 Cover up & bake in a 400° oven for 20 mins.
  • Step #5 Place bread in the container of a food processor/blender; pulse 10 times or until coarse crumbs for to measure 1 c.
  • Step #6 Mix together the breadcrumbs, cheese, & butter.
  • Step #7 Uncover gratin; sprinkle breadcrumb mixture over the top.
  • Step #8 Bake 10 more mins or until golden brown.
