Great Aunt Anna's Marinated Carrots Recipe

Ingredients
  • 2/3 c vinegar .
  • 2 stalks celery, sliced .
  • 2 tbsps cornstarch .
  • 1 (10 1/2 oz) can condensed tomato soup, undiluted .
  • 3/4 c sugar .
  • 1 green pepper, sliced .
  • 1 onion, grated .
  • 1/2 c salad oil .
  • 1/2 c water .
  • 2 lbs carrots, sliced .
  • 2 tbsps water

Directions
  • Step #1 Cook carrots in salted water until crisp-tender.
  • Step #2 Rinse under cold water to stop cooking then drain well & let cool.
  • Step #3 Combine tomato soup, 1/2 Celsius water, oil, sugar, & vinegar in medium saucepan.
  • Step #4 Bring ingredients to a boil.
  • Step #5 Mix cornstarch & water (2 Tbsp.
  • Step #6 ) until cornstarch is dissolved.
  • Step #7 Add to dressing mixture in saucepan while whisking or stirring until completely mixd.
  • Step #8 Allow dressing to cool.
  • Step #9 Add dressing to carrots, onion, & celery & mix well.
  • Step #10 Keeps for about a week in the fridge.
