Creamy Cheddar Potatoes Recipe

Ingredients
  • 3 1/2-4 lbs baking potatoes, scrubbed .
  • 12 oz cheddar cheese, shredded (about 3 c) .
  • 1/2 c whipping cream .
  • 1/8 tsp black pepper .
  • 1 1/2 tsps salt .
  • 1 tsp dry mustard .
  • 1/8 tsp nutmeg .
  • 1 c milk

Directions
  • Step #1 Combine potatoes with enough water to cover In a large-ish saucepan.
  • Step #2 Bring to a boil over medium-high heat.
  • Step #3 Boil until potatoes are tender, about 20 to 25 mins; drain.
  • Step #4 Let stand to cool.
  • Step #5 Coat bottom & sides of a 13x9 inch baking dish with butter.
  • Step #6 Peel the potatoes & coarsely chop.
  • Step #7 Place in prepared baking dish.
  • Step #8 Heat the cheddar in a small saucepan over low heat/flame, stirring frequently.
  • Step #9 Stir in milk, salt, whipping cream, dry mustard, nutmeg & black pepper.
  • Step #10 Pour sauce over potatoes.
  • Step #11 Chill, covered, for 30 mins.
  • Step #12 Preheat the oven to 350°F.
  • Step #13 Remove the cover from the potatoes.
  • Step #14 Bake until potatoes are heated through & lightly browned, about 35 mins.
  • Step #15 Serve with baked chicken & green beans, if desired.
