Step #1 Peel & cut the brinjals in slices 6mm thick.
Step #2 Place the slices in a deep 3.
Step #3 5 l dish & add the boiling water.
Step #4 Cover up & microwave for 10 mins on 100% power, shaking the dish at 3 min intervals.
Step #5 Drain the slices well & arrange half of them in a 25 x 25 cm (9") casserole dish.
Step #6 Peel & chop the onions finely, while the brinjals are cooking.
Step #7 Brown them on the hob, in the butter or margarine.
Step #8 Add the beef.
Step #9 After they are browned, add the can up tomatoes with the juice & the tomato paste.
Step #10 Simmer for 20 mins.
Step #11 Spice up with salt & pepper.
Step #12 Make the sauce in the microwave oven.
Step #13 (Or do your own thing on the hob!) Microwave the milk, uncovered, butter or margarine & salt, in a deep 1l dish for 4 mins on 100% power, cornflour, stirring well with a wire whisk at 1 min intervals.
Step #14 Beat the egg & stir it quickly into the sauce.
Step #15 Stir in the cheese.
Step #16 Put half the meat mixture on top of the brinjals in the casserole dish.
Step #17 Arrange the rest of the brinjal slices on top & cover them with the remaining meat mixture.
Step #18 Pour the sauce over the moussaka & microwave it, for 12-15 mins on 70% power, uncovered, or until done or Bake in a conventional oven (190C/375 or gas mark 5) for 40 mins or until the topping is set & golden.
