Vegan Yeshimbra Assa (ethiopian Chick Pea Fritters) Recipe

Ingredients
  • salt & pepper .
  • 2 1/2 c water .
  • 3 c chickpea flour .
  • 1/2 c oil .
  • 3 tbsps niter kebbeh .
  • 1 tsp minced garlic .
  • 2 tbsps minced onions .
  • 3 garlic cloves, minced .
  • 2 onions, finely sliced .
  • 1/2 c berbere

Directions
  • Step #1 1.
  • Step #2 Mix the flour, salt, & pepper In a large-ish bowl.
  • Step #3 Stir in the 3/4 c water, onion, & garlic.
  • Step #4 If dough is too crumbly, add a little more water.
  • Step #5 Dough should form a compact ball.
  • Step #6 2.
  • Step #7 On a lightly floured surface roll out dough until it is 1/4" thick.
  • Step #8 Use cookie cutters to cut out shapes (fish shape is traditional).
  • Step #9 3.
  • Step #10 Pour oil into a skillet 2-3" deep.
  • Step #11 Heat oil until it reaches 350 degrees on a deep-frying thermometer.

  • Step #13 Fry fritters for 3-4 mins, turning them frequently until they puff slightly & are golden brown on both sides.

  • Step #15 Transfer to a towel to drain.
  • Step #16 6.
  • Step #17 Prepare sauce.
  • Step #18 Chop onions very fine, 3 cloves of minced garlic, 1/2 c berbere, & set aside 1/2 c oil, 1-1/2 c water, & 1 tsp salt.

  • Step #20 Cook the onions in a dry skillet over the lowest heat for 5 mins, or until they are soft & dry.
  • Step #21 Do not let burn or brown.
  • Step #22 8.
  • Step #23 Pour in the oil, & when it's hot, stir in the the berbere & garlic.
  • Step #24 Add the water, stir, & cook briskly over moderate heat until the sauce thickens.
  • Step #25 Spice up with salt.
  • Step #26 9.
  • Step #27 Place the fritters in the skillet & coat them with the sauce.
  • Step #28 Reduce the heat to low, cover the skillet partially, & let simmer for 30 mins.
