Corn And Rice Medley Recipe

Ingredients
  • 3 large shallots, sliced thinly
  • ground black pepper to taste
  • salt to taste
  • 1/2 tsp white sugar
  • 2 c water
  • 2 tbsps sliced fresh mint leaves
  • 2 c fresh corn kernels
  • 1 c Basmati rice
  • 2 tbsps butter, divided

Directions
  • Step #1 Melt 1 tbsp butter in a small saucepan over med-heat/flame.
  • Step #2 Stir in the rice, add the water, & bring to a boil.
  • Step #3 Reduce heat, cover & let simmer for 16 to 18 mins, or until water is absorbed & rice is tender.
  • Step #4 Meanwhile, melt 1 tbsp butter in a large skillet over med-heat/flame.
  • Step #5 Stir in corn, sugar, shallots, salt & pepper.
  • Step #6 Cook, stirring every once in awhile, for 4 to 6 mins, or until tender.
  • Step #7 In a serving bowl mix cooked rice, corn mixture & mint.
