2 c cherry tomatoes or grape tomatoes, red & yellow .
2 tbsps olive oil .
2 tbsps finely sliced shallots .
1/2 tsp salt .
2 medium zucchini, cut in 1-inch pieces .
1/3 c pitted coarsely sliced black olives
Directions
Step #1 Heat 1 tbsp of the oil In a large-ish nonstick skillet over med-heat/flame.
Step #2 Add zucchini & cook, stirring every once in awhile.
Step #3 6 mins or until lightly browned; add shallot; stir 1 min or until soft.
Step #4 Add tomatoes, olives & rosemary; cook, stirring every once in awhile, 2 mins or until tomatoes are hot BUT not collasped; season this with 1/4 tsp salt & pepper, transfer to plate.
Step #5 Add remaining 1 tbsp oil to skillet; season chicken breast with remaining 1/4 tsp salt & pepper; cook turning once, 8 mins or until browned on both sides & firm when pressed in center; transfer to a plate; keep warm.
Step #6 Add wine to skillet & bring to a boil, return vegetables; cook 1 min, stirring once or twice to reheat; transfer to platter; top this with chicken breast & serve.
