Chicken Breasts With Cherry Tomatoes, Zucchini And Olives Recipe

Ingredients
  • 1/2 tsp ground pepper .
  • 1 tsp fresh rosemary, sliced .
  • 1/2 c dry white wine or vermouth .
  • 4 chicken breasts, halves skinless lbed .
  • 2 c cherry tomatoes or grape tomatoes, red & yellow .
  • 2 tbsps olive oil .
  • 2 tbsps finely sliced shallots .
  • 1/2 tsp salt .
  • 2 medium zucchini, cut in 1-inch pieces .
  • 1/3 c pitted coarsely sliced black olives

Directions
  • Step #1 Heat 1 tbsp of the oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #2 Add zucchini & cook, stirring every once in awhile.
  • Step #3 6 mins or until lightly browned; add shallot; stir 1 min or until soft.
  • Step #4 Add tomatoes, olives & rosemary; cook, stirring every once in awhile, 2 mins or until tomatoes are hot BUT not collasped; season this with 1/4 tsp salt & pepper, transfer to plate.
  • Step #5 Add remaining 1 tbsp oil to skillet; season chicken breast with remaining 1/4 tsp salt & pepper; cook turning once, 8 mins or until browned on both sides & firm when pressed in center; transfer to a plate; keep warm.
  • Step #6 Add wine to skillet & bring to a boil, return vegetables; cook 1 min, stirring once or twice to reheat; transfer to platter; top this with chicken breast & serve.
