Dilled Scandinavian-style Potato Salad Recipe

Ingredients
  • 2 c mayonnaise .
  • 2 tbsps sliced fresh dill .
  • fresh dill sprigs (to garnish) .
  • 6 new potatoes, skins on .
  • fresh parsley (to garnish) .
  • 8 radishes, sliced thin .
  • salt & pepper .
  • 1 medium red onion, sliced thin .
  • 1 1/2 c cooked fresh peas (or frozen & thawed peas) .
  • 2 hardboiled egg, sliced thin

Directions
  • Step #1 Add potatoes to large saucepan.
  • Step #2 Cover up with water & bring to a boil.
  • Step #3 Cook until tender about 20 mins.
  • Step #4 Drain & cool slightly.
  • Step #5 When cool enough to handle cut into halves or wedges.
  • Step #6 Transfer to large serving bowl.
  • Step #7 Add remaining ingredients Toss carefully.
  • Step #8 Cover up & chill for at least 1 hr to meld flavors.
  • Step #9 Serve chilled or a t room temperature, garnished.
