Cabbage Roll Casserole Recipe

Ingredients
  • 1 medium onion, sliced .
  • 1 lb sauerkraut (bag or jar) .
  • 2 (28 oz) cans whole tomatoes, sliced .
  • 2 garlic cloves, sliced .
  • 1/3 c rice, uncooked or 1 c Minute Rice, uncooked .
  • 1 1/2 lbs ground beef .
  • salt & pepper .
  • 1 small head of cabbage

Directions
  • Step #1 Chop cabbage into bite sized pieces, discard the core.
  • Step #2 Place cabbage in bottom of large deep casserole.
  • Step #3 Brown the meat, garlic, add the onion, salt & pepper.
  • Step #4 Add the rice & one can of the sliced tomatoes, including the juice.
  • Step #5 Mix together well & pour over the sliced cabbage.
  • Step #6 Spread the sauerkraut on top, including the juice.
  • Step #7 Cover up with second can of sliced tomatoes & juice.
  • Step #8 Bake uncovered in a 350° oven for 20 mins.
  • Step #9 Cover up & continue baking for another hr or until rice is tender.
