Cream Of Broccoli Cheese Soupi Recipe

Ingredients
  • 1 (8 oz) package processed cheese, cubed
  • 2 carrots, sliced
  • 1 pint half-and-half cream
  • 1 bay leaf
  • 1 small onion, sliced
  • 2 quarts chicken broth
  • 4 heads broccoli, sliced

Directions
  • Step #1 In a large pot over med-heat/flame, broccoli, mix broth, onion, carrots & bay leaf.
  • Step #2 Bring to a boil, then reduce heat & let simmer until vegetables are tender.
  • Step #3 Remove bay leaf.
  • Step #4 (At this point, then return them to the pot, you may remove the broccoli stalks, carrots & onion & puree in a food processor/blender, if desired.
  • Step #5 ) Stir in the cheese until melted.
  • Step #6 Adjust seasonings.
  • Step #7 Stir in half-and-half & heat through.
