Summer Tomato Salad Recipe

Ingredients
  • 3 garlic cloves, smashed (with the salt) .
  • 2 tbsps olive oil .
  • 2 dozen kalamata olives .
  • 7 leaves basil, cut into ribbons .
  • 2 loaves Syrian bread, toast triangles .
  • 6 tbsps butter .
  • 1/2 tsp salt .
  • 1/2 c goat feta cheese .
  • yoghurt, 1/2 c per person (very thick, unflavored) .
  • 1 (16 oz) can drained & rinsed garbanzo beans .
  • 2 tbsps brown sugar .
  • 4 very fresh ripe tomatoes, cubed

Directions
  • Step #1 Drain & rinse your garbanzo beans, then soak in very hot water for 5 to 6 mins.
  • Step #2 then drain again.
  • Step #3 Cube your fresh, washed tomatoes, remove the stems.
  • Step #4 Slice your basil into thin ribbons.
  • Step #5 Crack your olives & remove pits, add feta & drizzle the 2 tbsps of oil on top olive oil.
  • Step #6 Crush peeled garlic with salt, Add in your garbanzo beans, add to salad, & toss.
  • Step #7 Sprinkle top the top this with the brown sugar.
  • Step #8 Take loaves of sryian bread, spread with butter (real), cut into triangles & then toast in a 500 degree pre heated oven for 5 mins.
  • Step #9 Serve these, & the yoghurt on the side in an attractive serving platter.
  • Step #10 Sometimes this is served with crumbled boiled eggs with bacon & tahini & lemon juice, but that is a more syrian presentation, & is a very aquired taste.
