Poached Peaches With Raspberry Sauce Recipe

Ingredients
  • Peaches .
  • 1 c water .
  • 12 whole cardamom seeds .
  • 2 c unsweetened raspberries (fresh or frozen) .
  • 2 c water .
  • 1 quart apple juice .
  • Raspberry Sauce .
  • 2 cinnamon sticks .
  • 6 whole allspice berries .
  • 6 firm ripe peaches .
  • 1/2 c sugar

Directions
  • Step #1 To prepare peaches, bring juice, water & spices to a boil.
  • Step #2 (Make sure your pot is narrow enough so that the liquid will cover the peaches).
  • Step #3 Drop peaches in liquid & poach for 10 mins.
  • Step #4 Remove the peaches, cover with cold water & slip off the skins.
  • Step #5 Cut each peach in half & remove the stone.
  • Step #6 Place the peaches in a glass or porcelain bowl.
  • Step #7 (The poaching liquid can be saved & re-used).
  • Step #8 For the sauce, mix the water & sugar in a saucepan, heat to a low boil & let simmer until liquid has reduced by 1/2.
  • Step #9 In a mixer, puree 1 c of raspberres & 1/4 c sugar syrup.
  • Step #10 (You can store the remaining syrup in a glass jar in the refrigerator.
  • Step #11 ).
  • Step #12 Stir the remaining berries into the puree.
  • Step #13 Serve the peach halves, in a pool of raspberry sauce & garnish with whipped cream on the side, round side up, if you like.
