Step #1 MARINADE: Put the shrimp, 1 C of wine, lemon juice & garlic in a ziploc bag in the morning & marinate in the refrigerator all day.
Step #2 Pour off & discard marinade (some of the garlic may stick to & can be cooked with the shrimp.
Step #3 ).
Step #4 Heat the butter & olive oil In a large-ish non-stick skillet over a medium-high heat; when hot stir in the the shrimp, tomatoes, orzo, onions, & green pepper & saute, stirring frequently until the shrimp turns pink & the orzo is lightly browned, about 5 mins.
Step #5 Add 1 1/3 c of hot water & 1 c of wine to the saute & bring to a boil.
Step #6 Reduce heat & let simmer covered for about 15 mins, stirring every once in awhile, until most of the liquid is absorbed.
Step #7 Dish into a medium size serving bowl; sprinkle with & stir in the the two cheeses.
