Filipino Eggplant (aubergine) Adobo Recipe

Ingredients
  • 1/3 c vegetable oil .
  • 6 garlic cloves, minced .
  • 1 pinch salt (optional) .
  • 1/4 c red wine vinegar .
  • 1/2 tsp fresh ground black pepper .
  • 5 c sliced eggplants, cut in 1 1/2-inch cubes .
  • 1/3 c soy sauce

Directions
  • Step #1 Spread eggplant on paper toweling & sprinkle with salt.
  • Step #2 Let drain for 30 mins.
  • Step #3 Rinse & pat dry.
  • Step #4 In a non-stick skillet, fry eggplant in oil until brown & set aside.
  • Step #5 In a small saucepan, vinegar, simmer soy sauce, garlic & pepper for 5 mins.
  • Step #6 Add eggplant, cover & cook over low heat/flame for 7 mins, stirring every once in awhile.
  • Step #7 Serve hot.
