Fried Bananas (banana Enrolada) Recipe

Ingredients
  • 2 tbsps dark brown sugar .
  • 1 tbsp butter, melted .
  • 1 c cornflour (also called masa harina) .
  • 1/4 tsp salt .
  • 1 tsp ground cinnamon .
  • 1/4 c sugar .
  • 4 firm ripe bananas .
  • oil (for deep frying, olive oil is typically used) .
  • 2 tbsps white rum .
  • 1 egg .
  • 2 tbsps milk

Directions
  • Step #1 Heat oil to 375 F in a Dutch oven or deep fryer.
  • Step #2 Mix corn flour & sugar in a bowl.
  • Step #3 Add butter, & milk, rum, salt, egg, stirring until it forms a thick batter.
  • Step #4 Peel bananas, & cut into quarters.
  • Step #5 Mix cinnamon with brown sugar.
  • Step #6 Sprinkle top half the cinnamon/ brown sugar mixture on the banana quarters.
  • Step #7 Roll banana quarters in the batter, & drop carefully into the hot oil, a few at a time.
  • Step #8 Fry 2 - 3 mins on each side, turning once, until golden brown.
  • Step #9 Drain fried bananas on paper towels & dust with remaining cinnamon/brown sugar mixture.
  • Step #10 Continue until all banana quarters are fried & dusted.
  • Step #11 Serve warm.
