Bosnian Vegetarian Meatballs In Yogurt Sauce Recipe

Ingredients
  • 1/4 c tamari soy sauce .
  • 1 tbsp dark sesame oil .
  • salt & pepper .
  • 1/8 tsp cayenne .
  • 2 c plain yogurt .
  • 4 eggs, beaten .
  • Sauce .
  • 1 1/4 c whole wheat bread crumbs .
  • 2 large onions, sliced .
  • 1 tbsp fresh dill, sliced .
  • 1 c almonds, toasted lightly & ground .
  • 1/2 tsp caraway seeds, ground .
  • 1-2 tsp caraway seeds, ground .
  • 2 eggs, beaten .
  • salt & pepper .
  • 1 tsp ground fennel .
  • 2 tsps dried basil .
  • 3 tbsps vegetable oil .
  • 2 tbsps Dijon mustard .
  • 2 garlic cloves, minced .
  • 3 medium carrots, grated .
  • 3 cake tofu, pressed .
  • 1/4 c sliced fresh parsley

Directions
  • Step #1 Saute the onions & garlic in oil until they begin to turn golden, about 6 mins.
  • Step #2 Add the carrots, salt & black pepper & continue to cook for 4 mins, stirring every once in awhile.
  • Step #3 Ste aside to cool.
  • Step #4 Mix together eggs, mustard, almonds, sesame oil, bread crumbs, & soy sauce.
  • Step #5 Stir in herbs & spices into bread-crumb mixture.
  • Step #6 Crumble the tofu into the mixture & knead it with your hands until mixd.
  • Step #7 Drain the sauteed vegetables & stir them into the mix.
  • Step #8 Form about 24 balls, place them on an oiled baking sheet & bake this at 350F for 30 mins until nicely browned.
  • Step #9 For yogurt sauce, just mix together the ingredients.
  • Step #10 Heat the sauce for about 15 mins, stirring constantly until it thickens.
  • Step #11 Be patient, & do not overheat or eggs may curdle.
