Involtini Di Pesce Spada - Swordfish Rolls Recipe

Ingredients
  • 2 lbs swordfish fillets, VERY thinly sliced & trimmed (trimmings reserved) .
  • 2 garlic cloves .
  • 2 tbsps sliced fresh parsley .
  • 2 garlic cloves, sliced .
  • 2 tbsps sliced fresh basil .
  • 4 oz olive oil .
  • 2 large eggs .
  • Sauce .
  • olive oil .
  • 1 tsp oregano .
  • 1 medium onion, sliced .
  • 3 oz provolone cheese, piccante. sliced .
  • 1 oz fresh lemon juice .
  • 3 oz breadcrumbs, homemade preferred .
  • 1 tbsp capers .
  • 2 tsps crushed tomatoes .
  • salt & pepper

Directions
  • Step #1 Heat 1 1/2 Tablespoons olive oil in a pan, garlic, & brown the onion, & trimmings from your swordfish.
  • Step #2 After browned, add parsley, basil, breadcrumbs an capers.
  • Step #3 Cook for approximately 2-3 mins & remove this from heat to cool.
  • Step #4 After it has cooled slightly, run the mixture through a food mill.
  • Step #5 Combine sliced Provolone piccante & beaten eggs with the breadcrumb/onion mixture.
  • Step #6 Take out your very thinly sliced swordfish & flatten slightly with a mallet.
  • Step #7 Then take your filling & place a nice sized spoonful pf mix in the middle of your flat fillets.
  • Step #8 Roll up the fillets & hold it closed with a toothpick.
  • Step #9 Saute rolls in a bit of olive oil until cooked through.
  • Step #10 While rolls are cooking, prepare sauce.
  • Step #11 Add lemon juice to a non-reactive bowl, & start whipping it vigorously adding your olive oil very slowly in a steady stream until you acheive a superior emulsion.
  • Step #12 Finish off with garlic oregano & tomato.
  • Step #13 Spoon a nice amount of sauce onto your plate, & place rolls on top of sauce.
  • Step #14 Serve.
