Chili Colorado Recipe

Ingredients
  • 3 c water
  • 1 (4 oz) can tomato sauce
  • 1 1/2 lbs boneless pork, cut into 1 inch cubes
  • 1/4 c sliced onion
  • 2 tbsps chili powder
  • 1/2 tsp garlic powder
  • salt & black pepper to taste
  • 1 tbsp bacon drippings, or vegetable oil
  • 3 tbsps all-purpose flour
  • 1 tbsp all-purpose flour
  • 1 tbsp vegetable oil
  • 1 tsp cumin

Directions
  • Step #1 Place 3 tbsps flour in a plastic bag.
  • Step #2 Add pork & shake to lightly coat with flour.
  • Step #3 Set aside.
  • Step #4 Heat bacon drippings & vegetable oil in a Dutch oven over medium high heat.
  • Step #5 Add pork & cook this until meat is evenly browned, about 5 to 8 mins.
  • Step #6 Stir in 1 tbsp flour, & cook 3 mins.
  • Step #7 Stir in the onion, tomato sauce, pepper, chile powder, cumin, garlic powder, salt, & water.
  • Step #8 Bring to a boil, then reduce heat to medium low & let simmer until pork is just falling apart, about 1-1/2 to 2 hrs.
