Rice Noodles With Chicken Recipe

Ingredients
  • 1 tbsp sunflower oil .
  • 1 stalk celery, finely sliced .
  • 4 tbsps lime juice .
  • 1 red bird's eye chile, deseeded & sliced .
  • 7 oz rice noodles .
  • 1/4 inch gingerroot, fresh & finely sliced .
  • 1 carrot, matchstick sliced .
  • 2 chicken livers, finely sliced .
  • 1 tbsp soy sauce .
  • 1 garlic clove, finely sliced .
  • 2 tbsps Thai fish sauce .
  • 5 1/2 c cabbage, Napa & shredded .
  • pickled garlic, sliced to garnish (optional) .
  • 1 sprig fresh mint, to garnish (optional) .
  • 2 tbsps fresh mint, shredded to garnish (optional) .
  • 4 scallions .
  • 2 c boneless skinless chicken, finely sliced

Directions
  • Step #1 In large bowl of hot water soak rice noodles for 15 mins & drain well.
  • Step #2 Using a wok or large skillet heat oil.
  • Step #3 Add the garlic, ginger, scallions, & chile, stir fry for approximately one min.
  • Step #4 Stir in the chicken & chicken livers & stir fry over high heat for 2-3 mins or until browning begins.
  • Step #5 Add celery & carrot to chicken mixture, stir fry for about 2 mins or until they soften.
  • Step #6 Stir in napa cabbage, fish sauce, lime juice, & soy sauce.
  • Step #7 Begin adding noodles while stirring & heat thoroughly.
  • Step #8 If desired sprinkle with shredded mint & pickled garlic.
  • Step #9 Place on serving dish, optional garnish sprig of mint , & serve as soon as possible.
