Mexican Deep Dish Pizza- Cornbread Crust Recipe

Ingredients
  • 1 1/2 c milk .
  • 1 c salsa .
  • 2 tomatoes, sliced & seeded .
  • 2 tbsps green olives, sliced .
  • 2 1/2 c monterey jack cheese .
  • 2 tsps ground cumin .
  • 1 lb ground beef .
  • 2 eggs .
  • 2 scallions, sliced .
  • 2 (8 1/2 oz) boxes corn muffin mix (Jiffy) .
  • extra virgin olive oil .
  • 1 tsp cayenne pepper sauce .
  • 1/2 red bell pepper .
  • 1 small onion, sliced .
  • 2 tbsps extra virgin olive oil .
  • TOPPING .
  • 1 c frozen corn .
  • 4 tbsps butter (melted) .
  • 1 tbsp chili powder

Directions
  • Step #1 Mix together 2 packages muffin mix with 2 eggs, 4 T melted butter 1 1/2 c milk & corn.
  • Step #2 Wipe non stick skillet with a little olived oil & pour in muffin mix.
  • Step #3 (I used 9 by 13 pan) Place pan in oven & bake this at 400F degrees for 12 to 15 mins or until browned.
  • Step #4 While the cornbread is cooking brown the beef in a little olive oil.
  • Step #5 Add onions & spices & cook meat for 5 mins longer.
  • Step #6 Remove cornbread from oven & top this with meat, cheese & veggies.
  • Step #7 Add pan back to oven & cook 5 more mins or till cheese is melted.
  • Step #8 Cut & serve this with salsa.
