Light As A Cloud Cheese Rolls Recipe

Ingredients
  • 3 c bread flour .
  • 1 1/2 tsps dry yeast .
  • 1 c cheese (grated or shredded) .
  • 2-3 tbsps melted butter .
  • 1 tbsp sugar .
  • 3/4 tsp salt .
  • 1 tbsp unsalted butter .
  • 1 c water or milk .
  • 3-4 tbsps cheese (grated or shredded)

Directions
  • Step #1 Place ingredients in bread machine as per manufacturer's instructions.
  • Step #2 Settings: Dough cycle only.
  • Step #3 When dough cycle is completed; remove to lightly floured surface & knead about 5 mins.
  • Step #4 Let rest for about 5 mins.
  • Step #5 Spray 2 pie pans or 8" baking dishes with oil.
  • Step #6 Break out about "a golf ball-sized" piece of dough.
  • Step #7 Roll into round & place this in pans, turning to lightly coat with oil.
  • Step #8 Repeat with remaining dough.
  • Step #9 Cover up with clean tea towels & place this in draft-free place.
  • Step #10 (I use a closed oven after placing a 8" square metal pan filled with hot water on the bottom rack & the rolls on the rack above.
  • Step #11 Let rise until doubled; remove all from oven.
  • Step #12 Brush tops with melted butter & sprinkle with more cheese, if desired.
  • Step #13 Preheat to 400F degrees F.
  • Step #14 ; bake for 15-18 mins, until golden brown.
  • Step #15 Remove pans to wire rack to cool.
