Shrimp Fettuccini With Butter Sauce (not Alfredo) Recipe

Ingredients
  • 1/2 c butter .
  • 1/4 c parsley, sliced .
  • 1/4 c lemon juice .
  • 4-6 green onions with tops, sliced .
  • 1/4 c parmesan cheese, grated .
  • 1 1/2 lbs medium raw shrimp .
  • 1/4 c mozzarella cheese, shredded .
  • 2 tsps dried basil .
  • 1 tsp salt .
  • 1/4 tsp black pepper .
  • 1/4 tsp dried oregano .
  • 1 lb fresh fettuccini .
  • 1/2 c olive oil .
  • 4 oz fresh mushrooms, sliced .
  • 4-6 garlic cloves, crushed or 3/4 tsp garlic powder

Directions
  • Step #1 Remove shells, clean & devein & remove tails from shrimp.
  • Step #2 Fill large pot with water & place on high burner to bring to a boil for the fettucini.
  • Step #3 Place oven rack at top position about 5 inches from top.
  • Step #4 Heat oven on broil.
  • Step #5 Melt butter in broiler pan (without rack) in oven or in 9x13 inch non-metallic dish.
  • Step #6 Take pan out of oven.
  • Step #7 Stir in remaining ingredients except for shrimp & fettucini & cheeses.
  • Step #8 Add the shrimp & arrange in a single layer.
  • Step #9 Broil 5 mins 4-5 inches from the heat.
  • Step #10 Meanwhile, put fettucini into boiling water & cook according to the directions on package.
  • Step #11 After 5 mins take out pan & turn each shrimp over & broil for 5-10 mins more (shrimp will curl up & turn pink).
  • Step #12 Fettucini should be cooked & drained in a colander (don't rinse) & put back into the pot.
  • Step #13 Pour the shrimp with butter sauce & veggies over the fettucini.
  • Step #14 Toss it all together with the cheeses.
  • Step #15 Serve it hot after cheese is melted.
