Peanut Butter And Banana Pancake Sandwiches Recipe

Ingredients
  • 1 egg white .
  • 2 small very ripe bananas, mashed (about 3/4 c) .
  • 32 tsps creamy peanut butter (about 2/3 c) .
  • 1 c skim milk .
  • 1/4 tsp ground cinnamon .
  • 2/3 c hot fudge, heated slightly .
  • To Serve .
  • 2 tbsps toasted wheat germ .
  • 1 tbsp skim milk .
  • 1 1/2 firm-ripe bananas, sliced .
  • confectioners' sugar, for dusting .
  • 1 1/2 c baking mix

Directions
  • Step #1 Coat a 12-inch nonstick skillet or griddle with nonstick cooking spray.
  • Step #2 Heat over medium to medium-low heat.
  • Step #3 For Pancakes:.
  • Step #4 In large bowl mix baking mix, mashed banana, egg white, milk, wheat germ & cinnamon.
  • Step #5 Whisk lightly until mixed.
  • Step #6 Drop batter onto heated pan, 1 tbsp per pancake (about 5 or 6 per batch).
  • Step #7 Cook until firm enough to flip, 30-45 seconds.
  • Step #8 Flip & continue to cook.
  • Step #9 Remove to a plate; repeat with remaning batter for a total of 32.
  • Step #10 (or any even number).
  • Step #11 To Serve:.
  • Step #12 Set aside 16 pancakes (or half of your total batch).
  • Step #13 Spread remaning half of pancakes with 2 tsp each of peanut butter.
  • Step #14 Top each pancake with 3 slices of banana.
  • Step #15 Spread remaning 16 pancakes with 2 tsp each of hot fudge.
  • Step #16 Place one fudge-covered pancake on top of each banana-covered pancake.
  • Step #17 Dust all with confectioner's sugar.
