Grilled Burgers With Garden Vegetables Recipe

Ingredients
  • 1/2 tsp salt .
  • 3 1/2 tbsps olive oil .
  • 2 medium tomatoes, cut into 1-inch-thick slices .
  • 2 lbs ground beef .
  • 1 fresh red chili pepper, finely minced .
  • 1 large zucchini, cut into 1-inch-thick slices .
  • hamburger buns .
  • 2 tbsps balsamic vinegar .
  • 1 tbsp lemon juice .
  • 1 c basil leaves, finely minced .
  • salt & pepper

Directions
  • Step #1 Preheat grill.
  • Step #2 In large mixing bowl, mix meat with basil, chili pepper & 1 1/2 tbsp of olive oil.
  • Step #3 Spice up with salt & pepper; cover & put in the fridge 10 mins.
  • Step #4 In large bowl, carefully toss zucchini & tomatoes with 2 tbsp olive oil, lemon juice, salt & vinegar.
  • Step #5 Divide meat mixture into 8 portions & flatten with hands to make patties.
  • Step #6 Grill hamburgers until meat is cooked through.
  • Step #7 Grill zucchini & tomatoes, turning them frequently until zucchini softens & both zucchini & tomatoes are browned on both sides.
  • Step #8 (Foreman grill is great for this).
  • Step #9 To serve, place hamburger between grilled vegetables on bun.
