Sausages With Potatoes And Rosemary Recipe

Ingredients
  • 2 1/2 tbsps extra virgin olive oil .
  • 1/2 c fresh basil leaves (roughly sliced for garnish & flavour) .
  • 800 g potatoes (ones that are good for roasting) .
  • 1 1/2 tsps paprika .
  • 1 tsp salt .
  • 2 stalks rosemary .
  • 6 thick pork sausage .
  • 1/2 tsp black pepper .
  • 1/2 ciabatta, loaf (crusts removed)

Directions
  • Step #1 Pe-heat oven to 400'F/200'C.
  • Step #2 Place sausages in a pot of cold water to cover & bring to boil.
  • Step #3 Simmer for approximately 5-10 mins.
  • Step #4 Remove from water & slice thickly.
  • Step #5 Place sausage slices in a roasting pan.
  • Step #6 Add potatoes which have been cut into either thick slices or chunks.
  • Step #7 Sprinkle top over the paprika, salt & black pepper.
  • Step #8 Add the rosemary.
  • Step #9 Drizzle with oil & toss carefully.
  • Step #10 Roast for 50 mins to 1 hr stirring every once in awhile or until potatoes are tender & sausages are golden brown.
  • Step #11 Tear ciabatta into bite sized pieces & add to pan for final 20 mins of cooking.
  • Step #12 Sprinkle top with basil & serve this with a green salad & a spicy tomato sauce if desired.
