Baked Pumpkin Pudding Recipe

Ingredients
  • 1 1/2 c fat-free evaporated milk .
  • 1/2 tsp ground ginger .
  • 5 tbsps light whipped topping .
  • 2 c cooked pumpkin or canned pumpkin .
  • 1/2 c egg substitute .
  • 1/4 tsp ground cloves .
  • 1 tbsp honey .
  • 3/4 c sugar .
  • 1 tsp ground cinnamon

Directions
  • Step #1 Preheat oven to 425F degrees.
  • Step #2 In a medium mixing bowl, sugar, beat the egg substitute, pumpkin, honey & spices until mixed.
  • Step #3 Slowly add milk & continue to mix.
  • Step #4 Pour into five eight oz custard c that is coated with nonstick cooking spray.
  • Step #5 Place in a 15 x 10 x 1 inch baking pan.
  • Step #6 Bake pudding uncovered for 10 mins.
  • Step #7 Reduce heat to 350 degrees & continue to bake for 30-35 mins (until knife inserted near the center comes out clean).
  • Step #8 You can serve this dessert warm or cold.
  • Step #9 Garnish with a dollip of whip topping & a sprinkle of cinnamon.
  • Step #10 Keep in refrigerator.
