Greek-style Cannellini And Vegetables Recipe

Ingredients
  • 1 tbsp fresh mint, minced (1 tsp dried) .
  • 3 tbsps olive oil .
  • salt & pepper .
  • 1 large onion, sliced (about 1 1/2 c) .
  • 1 zucchini, sliced (6 inches long) .
  • 1 bell pepper, sliced (red or green) .
  • 1 tbsp fresh dill, minced (1 tsp dried) .
  • 1/2 tsp fresh marjoram (sprinkle of dried) .
  • 15 oz can cannellini, drained .
  • 1 c orzo pasta .
  • 14 oz can stewed tomatoes, Italian-style .
  • 2 garlic cloves, minced .
  • 2-3 carrots, sliced (about 2 c)

Directions
  • Step #1 Cook the orzo according to package directions until al dente (about 8 mins in boiling water), & drain.
  • Step #2 Stir in 1 Tbsp oliev oil.
  • Step #3 Saute the garlic & onions in 2 Tbsp oil in large skillet.
  • Step #4 Add the carrots & bell peppers to the onions & stir.
  • Step #5 Stir the sliced zucchini into the skillet of vegetables.
  • Step #6 Add the mint, dill & marjoram.
  • Step #7 Gently stir in the the beans & tomatoes.
  • Step #8 Simmer for several mins, stirring every once in awhile.
  • Step #9 When the beans & vegetables are hot, add the orzo.
  • Step #10 Spice up with salt & pepper to taste.
