Swedish Creamed Potatoes From Skane (skansk Potatis) Recipe

Ingredients
  • 4 c cubed raw potatoes (about 6 medium) .
  • 3/4-1 c cream .
  • 1 c milk .
  • 1/4 c bacon drippings .
  • 1 large onion, sliced .
  • 1 1/2 tsps salt .
  • 2 tbsps sliced parsley .
  • 1/8 tsp pepper .
  • crumbled bacon, if desired

Directions
  • Step #1 Saute onion in 2 tbs bacon fat until soft & a meduim frying pan.
  • Step #2 Remove from pan & set aside.
  • Step #3 Add remaining bacon fat & potatos.
  • Step #4 Fry until golden brown on the outside.
  • Step #5 Stir in the onions.
  • Step #6 Add milk & cook a couple of mins.
  • Step #7 Look to see how much of the liquid is absorbed before adding the cream as you want enough to slightly cover the potatoes & enough to cook them.
  • Step #8 Sprinkle top with salt & pepper.
  • Step #9 Stir until mixed.
  • Step #10 Cover up pan.
  • Step #11 Cook very slowly, low heat until potaotes are soft, about 15 mins This will depend on how large your potato cubes are.
  • Step #12 Pour into serving dish & sprinkle with parsley.
