Step #1 Saute onion in 2 tbs bacon fat until soft & a meduim frying pan.
Step #2 Remove from pan & set aside.
Step #3 Add remaining bacon fat & potatos.
Step #4 Fry until golden brown on the outside.
Step #5 Stir in the onions.
Step #6 Add milk & cook a couple of mins.
Step #7 Look to see how much of the liquid is absorbed before adding the cream as you want enough to slightly cover the potatoes & enough to cook them.
Step #8 Sprinkle top with salt & pepper.
Step #9 Stir until mixed.
Step #10 Cover up pan.
Step #11 Cook very slowly, low heat until potaotes are soft, about 15 mins This will depend on how large your potato cubes are.
Step #12 Pour into serving dish & sprinkle with parsley.
