Chicken Salad Puffs Recipe

Ingredients
  • FILLING:
  • 1/4 tsp Worcestershire sauce
  • 1 (2.25 oz) can sliced ripe olives, drained
  • 1/4 c butter or margarine
  • 1/2 c water
  • 1 tbsp lemon juice
  • Dash salt
  • salt to taste
  • 2 eggs, room temperature
  • 1 tsp grated onion
  • 1/2 c all-purpose flour
  • 3/4 c sliced celery
  • 1/8 tsp pepper
  • 1/3 c mayonnaise or salad dressing
  • CREAM PUFFS:
  • 2 c sliced cooked chicken

Directions
  • Step #1 In a medium saucepan, bring water & butter to a boil.
  • Step #2 Add flour & salt all at once; stir until a smooth ball forms & does not stick to pan.
  • Step #3 Remove from the heat; & let this stand 5 mins.
  • Step #4 Add eggs, one at a time, beating well after each addition.
  • Step #5 Continue to beat until dough to well mixed.
  • Step #6 Drop by rounded tbspfuls onto a greased baking sheet, making six mounds 3 in.
  • Step #7 apart.
  • Step #8 Bake at 400F degrees F for 30-35 mins or until golden brown & dry & firm to the touch.
  • Step #9 Transfer to a wire rack.
  • Step #10 Immediately split puffs open; remove tops & set aside.
  • Step #11 Discard soft dough from inside.
  • Step #12 Cool puffs.
  • Step #13 For filling, mix the chicken, celery & olives in a large bowl.
  • Step #14 In a small bowl, mix remaining ingredients; stir in theto chicken mixture.
  • Step #15 Fill puffs just before serving.
