Chicken Liver Pate Crock With Apples And Onions Recipe

Ingredients
  • 1 small green apple, peeled, cored, thinly sliced .
  • 1/4 c heavy cream .
  • fresh ground black pepper .
  • 1 1/2 tsps kosher salt .
  • 1 lb chicken livers, rinsed & trimmed of fat .
  • 1 1/4 c unsalted butter .
  • 1 small onion, peeled & thinly sliced .
  • 3/4 c milk .
  • 1/2 tsp hot pepper sauce .
  • 1/4 c calvados or brandy

Directions
  • Step #1 Place chicken livers in a bowl & pour the milk over them.
  • Step #2 Allow to stand at about room temp for at least two hrs.
  • Step #3 Drain & rinse.
  • Step #4 Melt 4 tbl.
  • Step #5 butter in a medium skillet over med-heat/flame.
  • Step #6 Add livers & cook, for about 4 mins, stirring, or until livers are brown all over & still pink in the center.
  • Step #7 Remove livers with a slotted spoon to a food processor/blender.
  • Step #8 Return pan to the heat & stir in the onions.
  • Step #9 Cook over med-heat/flame, for about 5 mins, stirring frequently, or until softened.
  • Step #10 Stir in apples & cook for 3 mins longer, until slightly soft.
  • Step #11 Remove from heat & scrape into the workbowl with the livers.
  • Step #12 Return pan to low heat; deglaze pan with Calvados & pour over livers.
  • Step #13 Add cream, salt, pepper & hot pepper sauce & process mixture until smooth.
  • Step #14 Add remaining butter in pieces with the motor running & process until very smooth.
  • Step #15 Pour mixture into decorative crock(s).
  • Step #16 Cover up with plastic wrap & put in the fridge for at least 3 hrs.
  • Step #17 Note: the first time I made this was for a bridal shower.
  • Step #18 I had failed to notice the chilling period, & ended up putting the pate warm from the processor on the table.
  • Step #19 The ladies wolfed it down in record time, so be guided.
  • Step #20 Note2: Do not under ANY circumstances use margarine in place of butter.
  • Step #21 Note3: I sometimes add about 1/4 tsps ground allspice.
